Kabuli Chickpeas
Kabuli Chickpeas are known for their large, round seeds that range in color from cream to white, featuring a thin, white seed coat with zero tannin. These seeds are about twice the size of field peas, ranging from 260 to 600 grams per 1000 seeds. Kabuli chickpeas are typically sold whole, with larger seeds commanding a higher premium. Approximately 10 to 15 percent of global chickpea production consists of the Kabuli type. Kabuli chickpeas come in three sub-varieties based on their size:

Desi Chickpeas
Desi Chickpeas are characterized by their smaller, more angular seeds, ranging from 120 to 320 grams per 1000 seeds. The seed coat can vary in color, including green, purple, brown, or black. Desi chickpea plants are generally shorter and offer higher yields compared to Kabuli chickpeas. They are also earlier maturing and more resistant to disease, frost, and insect damage. The diameter of Desi chickpeas typically ranges from 6 to 7 mm, and the seed coat is hard. Desi chickpeas can also be processed into Split Desi Chickpeas.
